Homemade Sunflower Butter with Flax, Chia, and Cacao Nibs
My husband recently brought home some amazing peanut butter with flax and chia. I loved the extra omega-3 packed crunch of the seeds. I just wished that the peanut butter had been organic to reduce pesticide exposure. About the same time, I found Vibrant Life Army Wife and her Sunflower Seed Butter recipe. Put the ideas together, plus some cacao nibs for good measure, and this recipe was born. I’m not sure I’ll buy nut/seed butter again. According to my husband, this recipe is a keeper.
Homemade Sunflower Seed Butter with Flax, Chia, and Cacao Nibs
makes a generous pint
- 2 cups roasted, unsalted sunflower seeds
- 1/4 teaspoon salt
- 1 tablespoon coconut oil
- 1/4 teaspoon vanilla
- 1 teaspoon honey
- 2 teaspoons chia seeds
- 2 teaspoons golden roasted flax seeds
- 2 teaspoons cacao nibs
Process the sunflower seeds in a food processor until smooth, scraping the sides along the way. Mine was a nice consistency after about five minutes. Add in remaining ingredients and pulse until mixed.
